Weekly Menu Plan Ideas – WTCW #93

What to Cook Wednesday (WTCW) is super fun for me!  It helps me come up with new weekly menu plan ideas while also sharing with you some awesome recipes from around the web!

Sunday:  Corned beef did not make an appearance in our house for St. Patrick’s Day.  So, I’m going to make up for it and have baked honey mustard corned beef this week instead.

Monday:  Stir fry is such an awesome option for a quick weeknight meal.  I’ve got Asian stir fry with noodles on my list for the week because I know our Monday is going to be a busy one.

Finding Good Snacks {a Green Giant Surprise}

We’re a family of snackers.

When I pick my kids up from school and daycare in the afternoon, they immediately ask for a snack. So, I pack their snack in my lunch bag each morning to make sure I have something with me.
If we are headed out somewhere, we don’t leave home without our trusty snack bag either because someone will surely want a snack while we are gone.

No snack = lots of whining and complaining.

I always feel a little worried that they snack too much and don’t eat enough at meals! But, then I figure it is a phase and that their grazing will subside later in life. So, for now, snacks are a way of life for us.  I just try to make sure the snacks they eat are good snacks with nutritional benefits.

Our snacking habits are why I was so excited to hear that Green Giant {think vegetable Green Giant!} had a GIANT surprise: new veggie chips in two different flavors.

To say my kids descended on them is kind of an understatement. Mathlete did his fair share of eating them too!

Remaking Our Breakfasts – Yopa! Yogurt

I go to work super early in the morning {like always before the sun is up!} and no one else in my house is awake.  I try to squeeze every  last minute of sleep I can out of the night so I don’t allow a lot of time for preparing breakfast.  In fact, many mornings, I don’t even remember breakfast until I am already at work and then I turn to something super unhealthy in the cafe.  Not good!

One of my missions for this year was to eat healthier.  That  meant bringing healthier foods into our home for myself and my children.   They, like me, don’t have a lot of time to fit in breakfast either.

I’ve tried healthy cereals and similar items but without much success.  Many yogurts tend to be so full of sugar that I have avoided them for the most part.   One day, in the store, I saw Yopa! yogurt and decided to check it out.

My daughter was excited to see Gabby Douglas, the gold medalist, on the front because she is really into gymnastics! {At 5, she is really picky eater so anything that gets her interested is ok with me!}  She was also excited that she could mix things into her yogurt too.  I gave her one of the flavors to try and she polished off the whole container.

The best part…she asked for it again the next day.  I felt good saying yes because I knew she was getting important stuff for her diet like:
– protein (the 3.5 oz cup has 13% of the recommended daily value)
– calcium
– 5 cultures and 3 probiotics

I grabbed one of the cups along with a slice of toast on my way to work one morning.  It was the perfect size and made a super convenient option for me.  Bringing my own breakfast means I have so much more control over my calories AND keeps me out of the cafe.  Overall, starting off the day right with a balanced breakfast, helps me stay on track for the rest of the day!

Pinworthy Projects Party – My Pinworthy Picks

Ack! You know that feeling when you wake up one morning and realize that you didn’t do something you were supposed to do?  Yeah, I’m there…right now!  It is now Thursday morning at X o’clock and I realized I haven’t done my features yet.  In my defense, it has been a crazy 36 hours in our house (fractured finger for one little, doctor’s appointment with new specialist + bout of coup for the other little).

Cheesy Crab Artichoke Dip

WTCW #89

Happy Wednesday! Are you enjoying your week so far? I hope so!

How about I make it a little better and give you some delicious food to look at?

2.27 1-4

Sunday:  My love for soup is pretty much a given by now so it is no surprise to see at least one soup each week, right?  This week, it is chicken pozole.

Monday:  Meatless Monday again..what to make?  How about cauliflower “steaks”?

Tuesday:  I’ll have to tweak this recipe a little for Mathlete’s plate but balsamic chicken with mushrooms just looked too good to pass up due to his distate for mushrooms.

Wednesday:  Forget take-out!  Let’s make Chinese fried rice at home! I’m sure it will be just as delicious and much better for us!

2.27 5-7

Thursday:  Chicken cordon bleu is always super delicious but a real pain to actually make {especially on a weeknight}!  So, this chicken cordon bleu pasta seems like an awesome superstitution.

Friday:  I love curry.  Seriously, I could eat just about anything curried.  I’m going to give something totally new a try this week too with Thai red curry sausage stroganoff.

Saturday:  I don’t make meatloaf very often.  It makes a lot and tends to take a little bit more time that I usually have. I’m going to splurge {time wise} and make this pizza meatloaf though this week.

WTCW #88

Happy Wednesday!
I’ll be honest…this Wednesday totally crept on me.  We had a holiday {President’s Day} on Monday and my little boy refused to sleep for his nap.  So much for getting projects done that day!

Anyhoo, we all still need to eat right?  So, let’s take a look at some menu ideas.

2.20 1-4

Sunday:  I love starting the week out with a meal that everyone wants to sit around the table and really savor.  Pork chops in milk gravy definitely fills the bill for that wish.

Monday:  Soup can be the perfect option when it comes to meatless Monday.  I came across this cheesy cauliflower soup and knew it would make the perfect cold weather meal.

Tuesday:  I’m really trying to focus on eating healthier but still trying to make sure Mathlete gets lots of yummy food too.  Chicken with lemon and broccoli fits into both of those categories so we are going to give it a try.

Wednesday:  Love asian potstickers?  How about trying Asian sliders where the filling for a potsticker is turned into a patty?

2.21 5-7

Thursday:  Our kids love pasta and I like making it because it is so versatile.  I can add what I want for the adults and the kids can take/leave what they want.  This week, I’m going to try pasta with white beans and hope my kids will take the beans too!

Friday:  Fish has never really been something that I love to eat.  However, I am trying to add more of it into my diet so I’m hoping honey teriyaki salmon tastes as good as it looks!

Saturday:  For some reason, Saturday mornings tend to be so busy that our breakfast is consumed on our way out the door.  So, I’m going to serve this sweet potato and kale hash {with a fried egg} as a breakfast for dinner option!
