Hey everyone! This is Jenna from Wife in Progress back again, this time with some yummy Paleo Soups.

Once September hits and the air becomes crisper, I get an instant hankering for soup. I love to enjoy a warm, creamy bowl of soup while curled up on the couch. And just because I’m eating Paleo now doesn’t mean I will forego my creamy soup fix!

I  have tried most of these soup recipes and loved ALL of them. It’s amazing what some vegetables and coconut cream can do!

Stuffed Acorn Squash

Fall is here {or at least on its way} and I am loving the cooler temperatures. Fall is definitely my favorite season and I like to enjoy everything it has to offer from gorgeous weather to delicious comfort food. Once fall hits, I turn from zucchini and spaghetti squash and focus more on butternut squash and sweet potatoes. Fall and winter squash are so easy to find at just about any grocery store so it is so easy to use them in recipes. I was trying to decide what to make for dinner one night and decided to make stuffed acorn squash instead of pulling out my typical butternut squash.

Love the idea of filling fall squash for dinner.

Orange Chicken Stir Fry Recipe

Remember my clean-ish eating goal?  Well, it is totally still happening and I am doing {surprisingly} well with it despite all of the yummy things like chocolate eclair cake and s’mores in a jar coming from my kitchen.  I think it helps that so many things can be “cleaned” up but still taste delicious.  Take this orange chicken stir fry recipe for example…generally orange chicken evokes images of fried pieces of chicken covered in a thick, goopy orange sauce.  This one, on the other hand, is full of fresh vegetables and packed with flavor.StirFry with label

Meal Planning: What to Cook Wednesday

Good morning!  Are you having a great week?  Mine has definitely been hectic.  Getting back into the routine of school and sports and PTA can be really tough.  I find I have less and less time to sit down and spend so much more time on the go.  All the rushing about definitely makes meal planning more difficult too.

This brings me to a question I want to post to you as readers:  Does What to Cook Wednesday help/interest you?  Or would you rather see it replaced with a different type of content post {recipe, craft, DIY, etc.}?  Let me know in the comments please!

For now, I will share with you a few things on our list for the upcoming week.  This month has really brought a heavier focus on clean eating in our house.  While we are far from perfect {ahem, is birthday cake clean?}, we definitely try to make most of our meals as clean as possible to focus on a healthier lifestyle with more nutritious foods.  I’ve always loved quinoa but can now say that the taste/texture of brown rice is really starting to grow on me too.

Anyhoo, here are a few things you’ll find being cooked up in our kitchen.

Southwestern Egg Muffins

It is a new year. Have you started writing 2013 yet or are you still, like me, adding a little curve to the bottom of the 2 in 2012?

With the new year often comes declarations of grand goals…you know, those resolutions things. Of course, like so many, mine include healthier eating.

Someone really smart once said {something like this} that if you start your day off making the right food choices, then, you are most likely going to continue to make good choices throughout the day. Breakfast really IS the most important meal of the day.

So, let’s make a healthy choice and start our day with great things like shredded potatoes, lean ham, veggies and egg whites. I’m talking Southwest Egg White “Muffins” here.
