After a day commuting out in the cold {or even watching it from the window inside my house}, I want something warm and comforting. Balsamic Braised Beef

I love to cook. I would spend all of my free time in the kitchen if I could. The downside to all that cooking is, of course, all the dishes that it creates. I am not a dirty dish fan and would prefer to just pretend they weren’t there. One of my most recent recipes, paleo-ish balsamic braised beef, gave me my biggest dish challenge yet. But, the resulting recipe is totally worth it! It is so flavorful and the meat practically melts in your mouth.

This is the BEST beef dish I have ever made and it is PALEO! Yummy.

I have such a love affair with my Crockpot. Once the weather starts to cool a little bit and I move away from grilling everything from burgers to fruit, I start using my slow cooker more and more. Mathlete isn’t always a huge fan of chicken cooked in the crockpot so I tend to stick to beef more often.

Cheesy Beef and Potato Casserole and Bonus Box Tops

We all know it is time to go back to school. According to my Facebook page, some people have already started school. Once those first days of school start, it is a slew of after school activities, homework and busy nights trying to squeeze everything in. One thing that becomes harder to squeeze in is a home cooked meal. I’ve got the solution for that with my recipe for cheesy beef and potato casserole that is super easy and really delicious.

It is really easy to select 6 {or more} General Mills® products because they include delicious cereals like Cheerios™ and Lucky Charms™ that your family already loves. It also includes the Betty Crocker™ specialty potatoes I used as the base for my easy weeknight casserole!

What You’ll Need:
1 box Betty Crocker™ Cheesy Scalloped Potatoes
1 tsp oil
1 lb ground beef
1 onion, diced
1 bell pepper, diced
1 clove garlic, minced
3 Tbsp butter
2 cups boiling water

Let’s Make It:
1) Preheat oven to 350 degrees. Spray a 9×9 square baking dish with non-stick cooking spray.

2) Heat oil in medium sized skillet over medium heat. Add onion, garlic and pepper and saute for 1-2 minutes. Add ground beef and cook, stirring to crumble, for 5-7 minutes or until done. Drain.

3) In a large bowl, combine sauce packet from potatoes with boiling water and butter. Stir until butter is melted. Stir in potatoes and beef mixture. Pour into prepared baking pan. Cover with foil.

4) Bake in oven for 15 minutes. Remove foil and bake an addition 5-10 minutes or until potatoes are tender and sauce is thickened.

This casserole was a huge hit with our family and I liked how quickly I could make it on a busy weeknight. It will be perfect for when we are back in school and all of our weeknights are super busy.

Awhile back, I was cruising the internet searching for recipes for my monthly meal swap.  I needed something fairly easy to multiply since I was making 5 batches but that was delicious too.  I picked a recipe from a very well known blog and bought all of the ingredients to make it.  Long story short…it was a flop.  There was absolutely no way the recipe would work as written and I spent over an hour trying to figure out  a way to make things work. Amazing Reuben Dip

A Reuben is one of those sandwiches that has a devoted following.  You either love it or hate it.  Mathlete is in the love category. If it is on the menu, Mathlete will order it without question.  Me…I am in the other camp.  I don’t care for it so we never make it at home.  I would much rather have a balsamic chicken or kalbi beef sandwich instead!

Collective Bias DisclosureAhhh, Valentine’s Day.  It is a great day to remind the one that you love exactly how much you love them by spending way too much money on overpriced flowers and a fancy dinner out in a crowded restaurant that is serving ‘eh’ tasting food because the kitchen is just so busy.  Of course, you’ll pay double the normal amount for the prix fixe menu because it is a privilege to get less choices and slower service.  How about doing something a little different this year and having the perfect Valentine’s Day dinner at home!  Yep…at home!
