Turkey Taco Cups
  • 1 lb ground turkey
  • 2 packages low sodium taco seasoning
  • 1 cup water
  • 1 zucchini, peeled and diced
  • 24 wonton wrappers
  • shredded cheese (I used Mexican blend)
  1. Preheat your oven to 325 degrees.
  2. In a large pan, brown the ground turkey. Drain and return to the pan.
  3. Add taco seasoning, water and zucchini. Bring to simmer over medium heat and cook for 10 minutes, stirring occasionally.
  4. Spray muffin pan with cooking spray and line with two wonton wrappers per muffin cup.
  5. Fill cups with turkey mixture. Top with 2 Tbsp shredded cheese.
  6. Bake in preheated oven for 15 minutes until cups are browned on the edges and the cheese is melted.
