Pumpkin Muffins with Cream Cheese Glaze
  • Muffins:
  • 1 box spice cake mix
  • ⅔ cup water
  • 1 (15 oz) can pureed pumpkin
  • Glaze:
  • 4 oz cream cheese, softened
  • 1 tsp vanilla
  • ½ cup powdered sugar
  • 2 tsp milk {for thinning}
  1. Preheat oven to 350 degrees. Line a muffin tin with cupcake liners or coat with cooking spray.
  2. Mix together cake mix, water and pumpkin. Stir or mix in mixer for 2 minutes.
  3. Spoon mix into prepared muffin tins. Bake for 15 minutes or until a toothpick inserted into muffin comes out clean. Let cool completely.
