Chicken Sausage and Vegetable Saute
- 3 Bell peppers
- 1 squash
- 1 zucchini
- 1 medium onion
- 3 tsp fresh rosemary, finely chopped
- 2 tsp olive oil, divided
- ½ tsp crushed red pepper
- 1 tsp chopped garlic
- chicken sausage links
- ¼ cup water
- Heat 1 tsp oil over medium heat in sauté pan. Add chicken sausage and brown on both sides, 2-3 minutes per side. Add ¼ cup of water and reduce heat to low. Simmer, partially covered over low heat, for 10 minutes or until almost the water is evaporated. Set aside.
- While the sausage is cooking, cut your veggies {I slice the squash/onion and chop the peppers}.
- Heat remaining 1 tsp of oil over medium heat. Add onions and peppers. Sauté for 3-4 minutes. Add squash, garlic, rosemary and red pepper.
- Serve peppers with cooked sausage. Add rice if desired :)
