Chicken Sausage and Vegetable Saute
  • 3 Bell peppers
  • 1 squash
  • 1 zucchini
  • 1 medium onion
  • 3 tsp fresh rosemary, finely chopped
  • 2 tsp olive oil, divided
  • ½ tsp crushed red pepper
  • 1 tsp chopped garlic
  • chicken sausage links
  • ¼ cup water
  1. Heat 1 tsp oil over medium heat in sauté pan. Add chicken sausage and brown on both sides, 2-3 minutes per side. Add ¼ cup of water and reduce heat to low. Simmer, partially covered over low heat, for 10 minutes or until almost the water is evaporated. Set aside.
  2. While the sausage is cooking, cut your veggies {I slice the squash/onion and chop the peppers}.
  3. Heat remaining 1 tsp of oil over medium heat. Add onions and peppers. Sauté for 3-4 minutes. Add squash, garlic, rosemary and red pepper.
  4. Serve peppers with cooked sausage. Add rice if desired :)
