Guacalsa
 
A combination of the two best Mexican items: guacamole and salsa!
Ingredients
  • 2 (15oz) cans whole peeled tomatoes with juice (canned tomatoes...i know...gasp!)
  • 2 cans diced tomatoes with chiles (Rotel is great!)
  • ½ cup white onion, finely chopped
  • 2 cloves garlic, minced
  • 2 jalapeno, halved, seeded and chopped
  • ¼ tsp salt
  • ¼ tsp sugar
  • ½ tsp cumin
  • ⅓ cup cilantro, roughly chopped (you can use more if you dig lots of cilantro)
  • 2 Tbsp lime juice (~ 1 whole lime)
  • Guacamole
  • 2 avocados
  • ½ cup red onion, finely chopped
  • 1 serrano chile, minced
  • 1 Tbsp lime juice
  • 1 Tbsp cilantro, finely chopped
  • ½ tsp kosher salt
  • 1 roma tomato, seeded and diced
  • pinch of cumin
Instructions
  1. Throw the whole tomatoes in the food processor and give it a whirl.
  2. Then, add everything else in and pulse until you get the consistency you want.
  3. For the guacamole, remove the seed from the avocado and spoon into a bowl. Mix in all the other ingredients and smash to combine.
