Guacalsa
- 2 (15oz) cans whole peeled tomatoes with juice (canned tomatoes...i know...gasp!)
- 2 cans diced tomatoes with chiles (Rotel is great!)
- ½ cup white onion, finely chopped
- 2 cloves garlic, minced
- 2 jalapeno, halved, seeded and chopped
- ¼ tsp salt
- ¼ tsp sugar
- ½ tsp cumin
- ⅓ cup cilantro, roughly chopped (you can use more if you dig lots of cilantro)
- 2 Tbsp lime juice (~ 1 whole lime)
- Guacamole
- 2 avocados
- ½ cup red onion, finely chopped
- 1 serrano chile, minced
- 1 Tbsp lime juice
- 1 Tbsp cilantro, finely chopped
- ½ tsp kosher salt
- 1 roma tomato, seeded and diced
- pinch of cumin
- Throw the whole tomatoes in the food processor and give it a whirl.
- Then, add everything else in and pulse until you get the consistency you want.
- For the guacamole, remove the seed from the avocado and spoon into a bowl. Mix in all the other ingredients and smash to combine.
