School’s in which means dinner needs to be fast most night so we can get everything ready for the next day before earlier bedtimes.  Has your dinner routine changed since school is back in session?

Let’s take a look at some great recipes to for dinner.  After all, planning is half the battle!

[Crepes of Wrath], [Dessert Now, Dinner Later], [Recipe Girl]

Sunday:  Sundays are one of the few days where I typically get some extra time in the kitchen.  I’m taking advantage and making German meatballs in mushroom sauce.

Monday:  Summer vegetable parmesan bake is a meatless Monday dish that takes advantage of some fresh summer produce.  I’ll take it!

Tuesday:  I love the idea of breakfast for dinner and it usually cooks up pretty quickly.  These Greek yogurt pancakes sound like a great option too!

Wednesday:  The crockpot is a busy family’s staple.  I’m adding slow cooker salsa verde pork to our list this week.

Thursday:  Pasta is great way to get a filling meal on the table without a lot of prep work.  Fettuccine with tomato cream sauce sounds divine (plus it’s light!).

Friday:  Celebrate the end of the week with hummus and grilled zucchini pizza!

Saturday:  Spend more time playing and less time cooking on the precious weekend days and make slow cooker Thai red curry turkey.

WTCW #65

Ok, so my hair is no longer on fire {just a little bit of smoldering} so I can do a more proper What to Cook Wednesday feature for you this week. I will go ahead and warn you that I might not be able to offer as much next week as I will be sending not just one but both of my kids off to school for the first time ever! Kleenex is having a banner month thanks to my tissue investments!

We’re not here to talk about school though so let’s get down to the food.

Sunday: Kindergarten prep will be in full force in our house so I am definitely digging the idea of super comfort food. Chicken with artichokes and wine sauce offers some comfort with a little twist.

Monday: It may still be a little hot outside but the idea of trying African peanut soup just stuck with me from the moment I saw it.

Tuesday: We usually do our grocery pick-up on Tuesdays which makes it the perfect day to try out coconut shrimp since they will be fresh from the store!

Wednesday: Instead of tossing leftovers on trash night, meatloaf grilled cheese sandwiches offers a great option for using them!

[Mango & Tomato], [Its Overflowing], [Skinny Taste]

Thursday: Pasta night! I love the idea of mixing pasta with tons of fresh, summer veggies in pasta primavera.

Friday: By the end of the work week, I am usually looking for something quick and easy (but super tasty) to throw together for dinner. Baja chicken wraps sound like a great option that will fill all those requirements.

Saturday: There is something so summery about corn and crab cakes. With baked corn and crab cakes, I can instantly get the best of both!

Wednesday again!

This week’s WTCW is going to be big on the pictures and links doing the talking. I’m running around like a chicken with no head prepping for two (yes, two!) birthday parties this coming weekend. So, forgive me for the last of words.

WTCW #62

So, this WTCW was the hardest one for me to put together in quite awhile.  Why?  I was on a juice cleanse so the mere sight of food had me drooling all over my keyboard.

The cleanse is over now so I can actually think about eating some of these yummy recipes.  Let’s take a look…

[Recipe Girl], [Our Best Bites], [Rasa Malaysia], [Skinny Taste]

Sunday:  I’m supposed to start light when going back to solid foods.  Swordfish with pineapple salsa sounds refreshing and light!

Monday:  This zucchini ribbon pasta with basil cream sauce is chock full of yummy veggies.

Tuesday:  I’ll be getting back in from of the grill and making lemongrass shrimp skewers.

Wednesday:  As if buffalo chicken breasts weren’t good enough, now we have stuffed buffalo chicken breasts! Yum.

Thursday:  Speaking of stuffed, the cheese coming out of these pizza burgers looks delicious.

Friday:  Sausage stuffed zucchini is a great combination of fresh veggies and a little meat.

Saturday:  We’ll round out the week with a little breakfast for dinner and make bacon corn hash.

WTCW #61

Wednesday…again! We are running out of summer Wednesdays fast, aren’t we? That’s ok, fall and winter food tastes pretty good too. 


Let’s take a look at some yummy options for the coming week. 

[Skinny Taste], [Cheeky Kitchen], [Crepes of Wrath], [Peas and Crayons]

Sunday: Nothing says Sunday dinner to me like meatloaf. Bacon topped mini turkey meatloaves are a great option to go a little lighter on a traditional meal. 


Monday: Meatless Monday makes a return and this time I am doing a unique take on the ultimate delivery food: garden hummus pizza.  


Tuesday: I am always trying to add new types of cuisine into our diet so this Dak Galbi seemed like a great option to accomplish that goal. 


Wednesday: I hadn’t intended for this week to be so veggie centric but it certainly can’t hurt. Triple bean veggie burgers is a lighter option to the traditional grilled beef burger.

Thursday: Pasta night is back! This week we have ravioli with a white wine butter sauce on the menu. 


Friday: Veggies, veggies everywhere! I am practically drooling at the sound of a zucchini basil strata for dinner. 


Saturday: So, earlier in the week, we upended the idea of a traditional pizza. Now, we’re going to throw a curve ball at the world of quesadillas with a pizza quesadilla.

Wednesday…it always seems to sneak up on me.  At least I have something to look forward each “hump day”…WTCW! 

[Picky Palate], [Cookin Canuck], [Family Fresh Cooking]

Sunday: I love trying different kinds of burgers and experimenting with seasonings. This week, I found adobo feta turkey blt sliders which sounds awesome. 

Monday: We’re going meatless again with grilled zucchini and eggplant parmesan. 

Tuesday: Pasta night gets moved to Tuesday this week and we throw in some yummy peas and prosciutto.

Wednesday: Another new take on a classic summer food are these crispy chorizo dogs which look so yummy. 

Thursday: A mid-week grocery stop will be in order but spicy middle eastern shrimp definitely sound worth it. 

Friday: It is back out to the grill to start the weekend with pineapple lime grilled chicken.

Saturday: Tex mex hasn’t disappeared from these menus forever. In fact, this week, I’ve got sweet pulled pork tacos on the menu.

WTCW #59

It’s Wednesday and, unlike last week, I’m at work.

Oh well, that doesn’t mean we can’t check out a little bit of food fun!

[Little B Cooks], [Picky Palate], [Skinny Taste], [The Kitchn]

Sunday: Let’s start the week of right with something super yummy like Island Pork Tenderloin. 

Monday: H has swim lessons every Monday which means we have just under an hour to get both kids fed and to the pool. Chicken bruschetta on garlic toast sounds like a quick and yummy option.

Tuesday: The farmer’s market is full of delicious looking zucchini. Pasta salad with corn and zucchini is the perfect dish to put it to good use.

Wednesday: Another great {but easy} way to use all the fresh vegetables available right now: French Ratatouille.

[Simple Daily Recipes], [Eat Yourself Skinny], [Our Best Bites]

Thursday: We skipped meatless Monday so we’ll stick to a veggie pasta this week and make mushroom and broccoli lo mein.  

Friday: This zucchini, squash and ricotta galette looks so light and delicious…perfect for a summer night.

Saturday: Let’s end the week with a food celebration! My kids consider pizza party food so I’m putting grilled bbq pork pizza on the list.

WTCW #58

Does the thought of Wednesday make your mouth water and your tummy grumble?  Just me?

Well, let’s check out some delicious looking food anyways. {Then, I bet your stomach starts growling!}

[The Wicked Noodle], [The Kitchn], [Framed Cooks], [The Girl Who Ate Everything]

Sunday:  How about a fresh take on shrimp and grits?  This looked so delicious with the fresh vegetables that I had to add it to my list. Plus, who doesn’t love gouda in their grits?!

Monday:  We’re going meatless again with an arugula, apple and chickpea salad wrap. It sounds like a great meal without a lot of cooking!

Tuesday:  Chicken, artichokes and lemon…three ingredients that are so good together.  Lemon chicken with artichokes is a one pot dish that capitalizes on that combination!

Wednesday:  Maybe because I am posting this on July 4th but I could not get burgers out of my head when recipe hunting.  Good thing I found this bun-less fiesta hamburger to satisfy my craving.

[Pioneer Woman], [Skinny Taste], [Smitten Kitchen]

Thursday:  Pasta night!  We’re going a very creamy with our pasta tonight because I’m choosing pasta carbonara.

Friday:  I adore Spanish food and flavors.  Spanish chicken and rice sounds like  a great way to enjoy some Spanish flavor at home.

Saturday:  Our weekends have been busy {and hot}!  I’m thinking cold rice noodles with peanut lime chicken is a great option to help us cool down {and maybe slow down!}

WTCW #57

Ok, I’m back and ready to eat…er, cook. Ok, maybe a little of both!

Let’s take a look at some yummy ideas for this week.

[Mother Thyme], [Smitten Kitchen], [A Bountiful Kitchen]

Sunday: I didn’t get nearly enough seafood while away at the beach so I am putting grilled buffalo shrimp po boys first on my list! 

Monday: Meatless Monday’s main veggie this week is found in broccoli parmesan fritters.

Tuesday: How about some good ole traditional beef tacos for an easy weeknight meal?

[Blog Chef], [Eat 8020], [Taste and Tell], [Bella Eats]

Wednesday: The weather is really beautiful and perfect for giving my new grill a workout. Tonight, I’m going to give chicken Monterey a try. 

Thursday: Speaking of grilling, I would have never thought to try this but grilled pasta packets sound like an awesome idea.

Friday: Let’s end the work week with an easy to make Italian style monte cristos.

Saturday: Some nights I just love a good pasta dish like pasta with Portobello mushrooms, caramelized onions and chevre.
