I am excited to partner with Smithfield to bring you this recipe. While this post is sponsored, all thoughts and opinions are my own.
I am a big breakfast person. I truly believe that, by starting your day out with a protein packed breakfast, you can set the tone of your entire day. You’re more likely to be efficient and effective throughout your day and make smart food choices for the rest of the day too. Unfortunately, many times we are far too busy to make a full breakfast. But, with this ham, potato, and spinach pie, featuring Smithfield Anytime Favorites Ham, you can easily have a protein packed breakfast any day of the week.
Smithfield offers an entire line of great breakfast products, in addition to Anytime Favorites Ham, like bacon and sausage. All of these are easy to include in recipes to ensure a quality breakfast each day.
To try and ensure all kids get a good breakfast and help end childhood hunger, Smithfield is partnering with No Kid Hungry, an organization committed to providing innovative solutions to combat childhood hunger, to donate one million meals* to children in communities across America. Between now and October 31st, you can help by Smithfield and No Kid Hungry reach their goal by purchasing a Smithfield breakfast product. (*Visit http://nokidhungry.org/onedollar to learn more about how every $1 donated connects a child to 10 meals.)
Be sure to pick up Smithfield Anytime Favorites Ham, along with just a few other ingredients, so you can make this ham, potato, and spinach pie for your family’s breakfast!
Ingredients for Ham, Potato, and Spinach Pie:
1 package Smithfield Anytime Favorites Cubed Ham
1/2 cup heavy cream
1 1/2 tsp cumin
1 lb refrigerated Southwestern shredded potatoes
1 cup shredded Gruyere cheese
1 cup chopped fresh spinach
Salt and Pepper to taste
Let’s Make It:
1. Preheat oven to 375 degrees. Line a round pie pan with parchment paper.
2. In a large bowl, lightly beat eggs. Add in ham, cream and cumin. Stir in potatoes and 3/4 cup cheese. Stir in spinach. Season with salt and pepper. Pour into prepared pan. Top with remaining cheese.
3. Cover with foil and bake in preheated oven for 25 minutes. Increase heat to 400 degrees, remove foil and bake for an additional 10 minutes or until the middle is set.
You can easily use kale in place of the spinach and substitute regular shredded potatoes in place of the Southwestern version. I just love the combination of the mild spices from the potatoes and fresh spinach.
Smithfield Anytime Favorites are available in over 20 different cuts and flavors. In addition to the cubed variety I used in this recipe, you can also find honey sliced ham and maple ham steaks. All the varieties makes any meal not only easy to prepare, but also delicious. Be sure to purchase your Smithfield breakfast products to help Smithfield and No Kid Hungry reach their goal. For every purchase, Smithfield will donate enough for one meal to No Kid Hungry. You can double the donation by posting a picture of your Smithfield breakfast** to your social channels (Facebook, Twitter and Instagram) and tag it #breakfastpower and Smithfield will donate a second breakfast to No Kid Hungry.
