Pumpkin Muffins with Cream Cheese Glaze
- Muffins:
- 1 box spice cake mix
- ⅔ cup water
- 1 (15 oz) can pureed pumpkin
- Glaze:
- 4 oz cream cheese, softened
- 1 tsp vanilla
- ½ cup powdered sugar
- 2 tsp milk {for thinning}
- Preheat oven to 350 degrees. Line a muffin tin with cupcake liners or coat with cooking spray.
- Mix together cake mix, water and pumpkin. Stir or mix in mixer for 2 minutes.
- Spoon mix into prepared muffin tins. Bake for 15 minutes or until a toothpick inserted into muffin comes out clean. Let cool completely.
